2022 Caella Sparkling Wine
Our Sparkling Wine is made with Sauvignon Blanc grapes. It is a Pét-nat (Pétillant Naturel) which is a sparkling wine made in a manner that predates the “traditional method” used in Champagne. This wine has the ‘lees’ (spent yeast cells, the cell membranes of pulp, and stem and skin fragments of grapes) still in the bottle.
The palate is lively and crisp with honeysuckle, floral and grapefruit notes supported by soft effervescence. This has often has Apple or Pear cider notes. This vintage is still evolving. Buy a few and taste them every few months.
Pairs well with a summer salad, a light grazing board with cheese and cured meats, or seafood.
